Edible Purslane

Purslane is another edible weed that most people in the US think of only as a weed that is hard to eradicate. Personally I think it is a nice ground cover but perhaps my tastes are biased by the fact that I know the plant is useful and edible. Purslane has more omega 3 fatty acid (great for my bad back) than any other plant source that has been tested. That's some pretty powerful benefits.

Purslane need heat to grow. This one will not show up until mid summer when the temperature reaches high 80s or into the 90s. It is a great edible to add to your diet and can be used to help thicken soups and stews. This plant will grow in the cracks in the sidewalk so it isn't usually real hard to find. Just be careful not to pick and eat it from areas that have been or may have been sprayed with weed killer and fertilizer.
