Description
The bulb is typically the edible part fo this flowering plant. They can be cooked or eaten raw. Some individuals have reported becoming gassy after eating them raw, similar to when you eat sunchokes raw. I hav had lots of sunchokes and I don’t experience anything out of the norm myself, nor does my son so this effect must differ from person to person.
