Henbit Deadnettle or Common Henbit is a wonderful medicinal plant. This herb is a fantastic winter foraging opportunity that offers nutrition and medicine. It is also a great early plant for pollinators.
It is in the mint family but does not have a mint flavor. It is very mild in flavor so it’s a great option to add to salads. The pink/purple flowers also add a splash of color to your dish. All above ground parts of the plant are edible. Of course, as with all plants, the early you eat it the better. Older plants will get woody in the stems.
